Instructions
Prepare the polenta with cornmeal and salt water enough to get a good polenta texture, then when it is cooked, divide in half the amount of polenta, boiled spinach and passed through a sieve just to one of the half.
In smooth well buttered mould and with hole in the Middle, before you put the yellow polenta, pressing it so it gets up to half of the mold, then do the same with green polenta, pressing well and beating the shape on the table because they do not remain empty.
Drafted after two or three minutes on hot service plate and fill the void of the mould with thick sauce.
