Instructions

Wash and boil the potatoes in salted water for 40 minutes.

Then drain, Peel and mash with a potato masher, collecting the puree in a saucepan.

Incorporate the butter, a little at a time, even the milk hot banging with a whisk until you have a soft compound.

Combine the finely chopped anchovy fillets mixing them well with the mashed potatoes.

Finally add the washed and chopped parsley and serve.
