Instructions
Peel the potatoes and wash them.
Cut into cubes and place them in a saucepan with 1 teaspoon salt.
Cover with cold water and bring to a boil.
Simmer for about 20 minutes, then drain, after checking that they hold.
Put the potatoes in a ricer and wait 2 minutes until they stop emitting steam.
Heat the milk with the butter and pour it into a bowl.
Pass the potatoes directly on top of the bowl and mix well to obtain a smooth puree, but dense.
If it is too dry, add a little milk, even cold.
Add salt, pepper and add the cheese.
8 slightly flattened spheres packed: you can use the spoon to the ice-cream portions or your hands.
Allineatele on a baking sheet covered with parchment paper.
Winter cherries at your leisure.
Then, rinse briefly (3 minutes) in the oven before you bring to the table.
