In a Pan fry a chopped carrot, onion and celery, trimmed and washed, with 30 g of butter and 3 tablespoons of olive oil.
As soon as you join the Golden asparagus tips, 1 ladle of hot broth, add salt and cook covered for 10 minutes.
Then add the rice and stir, letting him taste and cook for 20 minutes, stirring and adding the hot broth.
Finally add salt, add the cream, 1/2 glass of brandy and grated grana.
