Risotto with sausage and borlotti
Instructions
Melt the butter in a saucepan, then soffriggetevi the onion, thinly sliced, and the sausage, peeled off and reduced to small pieces for 4-5 minutes on a moderate heat.
Add the beans, let them add some minutes in the sauce, then place the casserole rice and dates a mixed.
Let Brown briefly the rice, then soak it with a ladle of hot broth and continue cooking for 15 minutes.
As the rice absorbs the broth, add additional washers.
At the end of cooking, add salt and pepper, stir the risotto grated cheese and serve.
---ADVICE.
It is a rice inspired by the gastronomy of Mantua, which made extensive use of sausages or sausage.
Once the sausage was homemade with pork fat and lean, salt, pepper and minced garlic.
Reduced to chunks, it was cooked for a couple of hours in topping before adding the rice.
