Avocado Sauce (Salsa di Avocado)
Instructions
Finely chop the onion and put it in a bowl with the mascarpone.
Knead well to make a smooth mixture.
Peel the avocado, remove the seed and pulp make mashed by passing it to a ricer or simply tilling it with the wooden spoon.
Add the mascarpone proceeds along with a bit of paprika, cognac and a pinch of salt.
Ideal for canapés and fish entrees.
Ingredients and dosing for 4 persons
- 1 ripe avocado
- 200 g of mascarpone
- 1/2 onion
- 1/2 shot of cognac
- Paprika
- 1 pinch of salt
