Sarde a beccafico
Instructions
Cut the head to open them and sardines, remove the bone, so that each sarda becomes flat.
Wash and dry them with kitchen paper.
Stir cheese, breadcrumbs, parsley and garlic well chopped, salt and pepper, then add an egg and stir again.
Take a sarda (open) lie some of the dough and put another sarda (Sardinian two short padded with dough).
Passed on the edges a bit more egg you'll have slammed aside and proceed thus until the end.
Put the oil in a pan and when it is hot add the sardines made rigirandole several times.
When cooked remove from the oil, place them in a tray, contornatele of lemon wedges, sprinkle of oregano, serve well.

- 1000 g of fresh sardines
- 20 g of grated pecorino cheese
- 2 eggs
- 2 cloves of garlic
- 1 sprig of parsley
- 10 g of breadcrumbs
- Olive oil
- Salt
- Pepper
