Sicilian stuffed sardines
Instructions
Empty the fish, removing the head and bones carefully to not break it.
Wash them and dry them.
Pitted olives, wash and wring the capers, Peel the tomatoes, give them the seeds and chop everything together with two cloves of garlic and a tablespoon of parsley.
Mix the mince with the pecorino cheese and stuffed sardines that adagerete in a greased baking oil.
Put salt, pepper and oil, then cook in a hot oven for about 20 minutes.
Shall serve sardines stuffed in cooking Bowl garnished with tufts of parsley.

- 800 g of sarde
- 300 g of ripe tomatoes
- 50 g of green olives
- 30 g of capers
- 50 g of grated pecorino cheese
- 2 cloves of garlic
- 1 tablespoon of parsley
- Olive oil
- Salt
- Pepper
- For garnishing:
- Some tufts of parsley
