Brown lightly floured meat in butter and oil, salt and pepper and sprinkle with brandy, setting fire to the liquor.
Sprinkle with the juice of 1/2 lemon and evaporate.
Combine the lemon zest, the nut and cream, stir and let thicken.
Align the scallops on the plate and top with the sauce.
