Aubergine Mousse (Spuma di Melanzane)
Instructions
Finely chop the pulp of Eggplant, capers, anchovies, onions and parsley.
Put the mince into a large bowl, add the oil, salt and pepper.
Mix well all the ingredients by mixing carefully.
Serve the mousse spread on slices of toasted bread.
Ingredients and dosing for 4 persons
- 500 g of grilled aubergines
- 5 tablespoons of olive oil
- 1 tablespoon of wine vinegar
- 2 anchovies in olive oil
- Some of capers
- 2 pickled onions
- 1 sprig of parsley
- Salt
- Pepper
