Stockfish alla mediterranea
Instructions
Chop an onion, a clove of garlic and a tuft of parsley.
In a saucepan heat half glass of olive oil, add the chopped mixture yourself, then placed in the Bowl stockfish drained chopped rather large and cook 5 minutes on each side.
Add chopped tomatoes, salt and pepper, Cook for 10 minutes.
Washed, water and de-boned anchovies, cut it into small pieces, mix the sauce.
When they are dissolved, do still stand for 5 minutes and one minute before removing the Pan from the heat, add 1 tablespoon whole capers.
Accompanying wines: Roero Arneis DOC, Verdicchio Castelli Di Jesi "classic" DOC, Greco Di Tufo DOC.

- 800 g of stockfish
- 80 g of salted anchovies
- 250 g of peeled tomatoes
- 1 tablespoon of whole capers
- 1 sprig of parsley
- 1 onion
- 1 clove of garlic
- 1/2 cup of olive oil
