Stracciatella lettuce salad
Instructions
Cut the leaves more tender lettuce into strips and brown them in butter for 10 minutes.
Beat the eggs with a little pepper, salt and cheese.
Bring to a boil the stock, add the lettuce and after 5 minutes, slamming eggs with a whisk for 2 minutes.
Serve with croutons.

- 1 head of tender lettuce salad
- 100 cl of broth
- 30 g of butter
- 2 eggs
- 2 tablespoons of grated parmesan cheese
- Salt
- Pepper
- Some of toasted bread croutons in oven
