Raisin strudel
Instructions
Beat the egg yolks together with the sugar, cinnamon and lemon rind until foam is formed.
Beat the egg whites with the sugar and mix.
Finally mix the hazelnuts with flour and mix the dough.
Spread this mixture with two-thirds of the dough, then sprinkle flattened the grapes after they have been washed and made drain, spread by means of a brush butter on the remaining dough, cut away the thick edges, roll up and place on a baking sheet coated with grease, spread butter on top and bake at 190 degrees for 20 minutes.
Sprinkle strudel with icing sugar and cut into portions.
Ingredients and dosing for 4 persons
- Strudel dough with 100 g flour
- For the filling:
- 750 g of private grape seeds
- 20 g of icing sugar
- 20 g of crystalline sugar
- 2 egg whites
- 2 egg yolks
- Cinnamon
- == 1 lemon (zest)
- 30 g of ground hazelnuts
- 20 g of flour
- 30 g of spreadable butter
- Icing sugar
