Vegetarian Spaghetti (Tagliolini Vegetariani)
Instructions
Put the pistils of Saffron in 1/2 cup lukewarm water and let them soften for 30 minutes; combine the ricotta, butter and salt; dissolve slightly warming in a water bath until you have a smooth cream.
Cook pasta, drain, leaving a bit of cooking water and season it with the ricotta and cream cheese.

- 300 g of fresh tagliolini type semintegrali pasta
- 300 g of sheep's ricotta
- 500 g of broccoli
- 7 pistilli of saffron
- 2 tablespoons of cheese
- Butter
- Sea salt
