Shrimp sauce eggs
Instructions
Toast the pine nuts in the oven and mince finely.
Also chopped the onion and parsley and fry them in a pan with 20 g of butter and oil, then add the washed prawns and a pinch of salt; Cook for 10 minutes.
Add the pine nuts and cook for 5 minutes, then rinsed with 5-6 tablespoons of hot water and simmer on low heat for half an hour.
Then everything passes through a sieve or blender and keep the sauce aside.
Melt 30 g of butter in a large pan and bake the eggs, being careful not to break the yolk.
As they become curdled ma non troppo, roundtrip with a shovel on a serving dish and pour over the sauce.
