Scrambled Eggs with Mushrooms (Uova Strapazzate con Champignon)
Instructions
Clean the mushrooms, wash thoroughly and cut them into quarters or in very thin slices.
Irrorarli with a little lemon juice because they do not become dark.
Meanwhile prepare the Bacon: cut thin enough cubes and let it dissolve in a large skillet to moderate heat.
Or instead of bacon, to heat the butter.
Add the mushrooms and cook without them becoming too soft.
Meanwhile, beat the eggs lightly with water, salt and pepper with a fork and pour it all over the mushrooms.
Do moderate simmer for 4-5 minutes, occasionally stirring with a shovel and try to control the cooking.
Before serving sprinkle with parsley and season with salt.

- 200 g of mushrooms
- 1 tablespoon of lemon juice
- 50 g of semigrassa bacon (or 50 g of butter)
- 4 eggs
- 2 tablespoons of water
- Little of parsley finely chopped
- Salt
- White pepper
