Clean and gut the fish.
Salt coating the bottom of a baking sheet.
Carefully place the fish and cover them completely with a thick layer of salt.
Bake in the oven at 200 degrees already warm and cook for 30 minutes.
Break up and remove the crust of salt (probably will remain attached to the skin).
Lay the fillets are still hot in individual plates and drizzle with a little olive oil.
