Barley soup (2) (Zuppa D'orzo (2))
Instructions
Boil the water, add the sliced leeks and cook for 10 minutes, then add the diced potatoes and cook for another 15 minutes, then add the barley and cook over low heat, uncovered, for 45 minutes.
Shortly before the end of cooking, add the nuts.
When cooked, add the parsley, butter and a bit of nutmeg.

- 200 cl of water
- 1 leek
- 500 g of potatoes
- 2 dice
- 30 g of butter
- Nutmeg
- 5 tablespoons of pearl barley
- 1 tablespoon of chopped parsley
