Leek winter soup
Instructions
Wash, dry and cut into rings 1000 g abundant winter leek and sauté for 10 minutes in a large saucepan with 50 g.
of butter and 50 g.
of bacon sliced, stirring often.
Then add 1 l and 1/4 of chicken broth, defatted, bring to a boil and let simmer on low heat until all the leeks will be very tender.
Season with pepper and cream (optional) or grated emmenthal cheese.
