Melt the chocolate in a Bain-Marie.
prepare the syrup by bringing to the boil the sugar and 1/2 glass of water; mix the chocolate with the syrup and 2 tablespoons of whipped cream.
Used on ice cream or to fill cakes.
For the Couverture chocolate is sufficient to melt the chocolate (without any other ingredients) and spread it on the cake to make it thicken in the refrigerator.
