Citrus lobster salad
Instructions
INGREDIENTS for 4 PEOPLE 1, 400 kg of live lobster, 2 oranges, 2 lemons, juice of 1/2 Orange, juice of 1/2 lemon, 50 g extra virgin olive oil.
Cook the lobster steamed for about 15-20 minutes, remove the flesh from the body and claws.
Let cool and cut into slices.
Peel the oranges and lemons and remove the skin from the garlic cloves.
Emulsify the oil with the lemon juice and orange juice.
Compose a mosaic in the dish with the slices of lobster and citrus and dress with the sauce.
Served cold.
