Scandinavian rice salad
Instructions
INGREDIENTS for 4 PEOPLE 300 g of brown rice or white long grain parboiled, 100 g smoked salmon 100 g smoked swordfish, 200 g of smoked mackerel fillets in oil, 1 medium onions, 4 eggs, some sprig of dill or fennel, 20 g olive oil, salt and pepper.
Boil the rice in salted water.
Check the cooking time recommended on the package: some types of rice require up to 45-50 minutes, others are partially pre-cooked and just less time.
Meanwhile, drain the mackerel fillets and remove their skin.
Disfateli into chunks and put them in a salad bowl.
Join shredded dill and other pieces or sliced into strips.
Season with a little salt, pepper, olive oil and mix well.
Shelled eggs and finely chop or mash with a fork.
When the rice is cooked al dente, drain and wipe it down, always in his colander under cold running water for about 1 minute.
Let it drain completely and then pour it into the bowl.
Mix well and adjust salt if necessary.
Put over the chopped egg and some slice of raw chopped onions.
