Instructions

03402 SILK HANDKERCHIEFS with PESTO 6 PEOPLE INGREDIENTS for the SAUCE: 12 bunches of Basil genovese, 4 cloves of garlic, 80 g of pine nuts, 40 g of shelled walnuts, 70 g of parmigiano reggiano, 30 g of pecorino cheese, 200 g of extra virgin olive oil, coarse salt (s.q.) For the DOUGH: 600 g flour, 3 eggs, 3 water shells, a dash of olive oil, a bit of white wine, a pinch of salt.

PROCEDURE wash the Basil and drain without squeeze.

Put salt in a mortar, pine nuts, walnuts, garlic and start pounding.

Add Basil to reduce everything to a single amalgam.

Add the cheese and oil.

Stretch the pasta cooking water (1 tablespoon per person).

Knead the dough and pull it thin, cutting it as silk handkerchiefs for the Lady.

Boil them in salted water, for 3 disponetene interspersed with pesto and garnish with fresh basil leaves.
