Chioccole with beans

03527 SNAILS with BEANS INGREDIENTS 4 PEOPLE 350 g pasta like snails, 200 g boiled al dente borlotti, 1/2 onion, 2 celery sticks, 1 garlic clove, Sage, 3 4 salted anchovies, a sprig of parsley, extra virgin olive oil, salt and pepper.
Chopped onion PROCEDURE with celery.
Place in a saucepan along with the Sage leaves, garlic crushed and boiled Pinto.
Cover with cold water and place the pot on the fire, bringing to a boil.
Add salt and seasoning, stirring occasionally, until the liquid is absorbed, careful, halfway through the cooking, remove the garlic and Sage.
In the meantime wash the anchovies under running water, remove the bones and meat finely tritatene by joining the parsley cleansed and washed.
Boil the pasta in salted water to a boil.
Al dente drain and pour into the soup tureen.
Add the beans and their cooking sauce, anchovies and parsley.
Serve with a drizzle of raw oil, sprinkled with salt and flavored with ground pepper.
Stir to season evenly and serve immediately.
