Fried vegetarian
Instructions
FRIED VEGETARIAN 05524 4 PERSONS INGREDIENTS 2 small artichokes, Zucchini, 2 1 onion, bell pepper, 4 1/8 asparagus tips, 16 Sage leaves, 1 small eggplant, cauliflower florets 8, 1 tomato.
For the batter: 150 g flour, 200 cc of dry white wine, a pinch of baking soda, salt and pepper, oil for frying.
PROCEDURE Peel and wash all vegetables.
Boil in salted water the florets and tips of asparagus for 2/3?.
Drain and let them dry on a tea towel.
Cut the Eggplant into small cubes, put them in a colander, salt and let drain for 30 minutes.
Prepare the batter by putting in a bowl the flour, wine, baking soda.
You work well with a whisk until mixture is smooth and homogeneous.
Let stand in refrigerator for 30 minutes.
Slice onion into rings, cut into julienne Zucchini sliced peppers, slices tomatoes and artichokes.
Flour eggplant, Zucchini and onion slices.
Dip the other vegetables in batter then in the hot oil.
Onions, Zucchini and eggplant are just flour.
Add salt and serve hot.
