Cotechino in jail

ingredients for 4 people
1 cotechino around 700 g, 300 g of a large slice of beef, 200 g of ham in two slices, half an onion, extra virgin olive oil, meat broth, dry Lambrusco, salt.
Procedure
Boil halfway through the cooking the cotechino, drain and gently remove the skin. Place on cutting board, slice beef without coil, lie above the two slices of ham, put the cotechino and wrap it up, tying the roll with a string colorless, as if it were a meatloaf.
In an earthenware dish FRY in a little oil the finely chopped onion. When will settle over the wilted roll and cover with broth and Lambrusco in equal proportions. Add salt, Cook over low heat with the lid on, for about an hour. Then remove the cotechino and slice it, after removing the twine, then place it back in the Pan and serve hot.
