Monkfish with herbs

07063 MONKFISH with HERBS INGREDIENTS for 4 PERSONS 800 g of monkfish, 100 g of breadcrumbs, 50 g of grated Parmesan cheese 2 hard boiled eggs, passed through a sieve, 1 clove of garlic, 1 tablespoon chopped thyme, 1 tablespoon of chopped parsley, 1 tablespoon chopped Marjoram, 2 Tablespoons extra virgin olive oil, 1/2 cup of white wine, salt, pepper.
Clean the fish, put it in the oven for 10 minutes at 220°, with a little oil.
Meanwhile prepare a paste with herbs, garlic, egg, sifted bread, grated Parmesan, salt, pepper, oil.
Remove the fish, wash it in the mixture and put it back in the oven for 5 minutes.
Serve with Parmesan Gratin potatoes.
