Instructions

INGREDIENTS for 6 PEOPLE 1 tablespoon coriander seeds, a tablespoon of cumin seeds, a tablespoon of salt, 2 tablespoons dried oregano, 1 tablespoon chopped fresh rosemary 1 tablespoon freshly ground black pepper, a tablespoon of olive oil, 2 tablespoons Garlic Puree, 2 tablespoons of hot sauce, a Turkey from 3, 8 kg, one tablespoon of flour, 10 cl, 20 cl red wine, chicken stock, butter to grease the aluminum foil, salt and pepper.

In a blender, coriander, cumin, salt, oregano, Rosemary, pepper and oil in a mixture; pour it into a bowl with the garlic puree and spicy sauce and stir.

Sprinkle this mixture with the Turkey, inside and out, wrap it up in plastic wrap and let it stand for 12 hours in a cool place.

Preheat oven to 240ø.

and cover the plates with aluminum foil with the buttered side facing down.

Let Cook the Turkey for 15 minutes in hot oven and continue cooking for 2 hours at 180°; half an hour before the end of cooking, remove the aluminum foil from above and turn the Turkey.

Prelevatelo from oven and set aside wrapped in other aluminum foil.

Meanwhile, pour the cooking sauce and the flour in a saucepan; stir and let browned 3 minutes for soft focus.

Without ceasing to stir, add the wine and broth, bring to a boil and let simmer for 5 minutes.

Cut the Turkey, place it on a serving dish and serve with the sauce.
