Prepare the dough: add 30 g of flour into a bowl, add yeast dissolved in a little water, stir, add more water until you get a soft dough. Let rise for 25 minutes in a warm place. Pour the rest of the flour on the work surface, form a dimple in the Center, add the egg, egg yolk, sugar, salt and vanilla, chopped butter and dough. Knead with your hands, adding more water if necessary. Working with energy, formed into a ball, put it in a floured Bowl, cut the surface with a cruciform cut and cover with a floured cloth and with a woollen cloth. Keep it in a warm place for 2 hours and 30 minutes. Then knead the dough for 2 minutes and roll it out with a rolling pin with a thickness of 1 cm, fold it back up in 2 parts ristendendolo 3 times, each time and infarinandolo each time before you fold it. Roll it out into a sheet of 1/2 cm. Cut to 4.5 cm disks using the rim of a glass. Make a hole in the Center with a small glass and place the discs on a plate covered with baking paper. Cover with a cloth dipped in flour and let them rest for 60 minutes.

Fry the doughnuts in a pan with plenty of hot oil a few at a time, holding them completely surrounded by pushing with the slotted spoon for 8 minutes. Drain, let them dry on paper towels, sprinkle them with a little spoon of sugar, keeping them warm in the oven turned off, as they are ready. Serve hot immediately.
