Instructions

20092 SOUFFLE ' with orange INGREDIENTS for 4 PEOPLE 4 whole oranges, juice of 3 oranges passed to a fine sieve, yolks, 7 5 egg whites, 2 tablespoons sugar, 20 g of vanilla sugar.

4 buttered soufflè containers and cover them inside with a thin layer of sugar.

Mix the egg yolks with sugar and orange juice in a saucepan or tinned copper steel and mount them slightly; Add 1/3 of the egg whites and mix everything together with a whisk.

Beat the remaining egg whites until foamy and add them to the mixture, stirring gently freshly brewed.

Peel the oranges, freeing the individual grains from the film that surrounds them; cut the slices into cubes and suddivideteli in 4 containers, alternating with a layer of filling, minding that the first and the last layer of stuffing.

Put in the oven at 220°, so that the various containers are well spaced between them, and cook for 12 minutes.

Remove the molds from the oven and cover them with a thin layer of vanilla sugar.

Serve immediately.
