07815 MONKFISH with AMERICAN SAUCE INGREDIENTS for 4 PEOPLE 4 slices of anglerfish (somewhat large), 1 bottle of tomato sauce, 1 bunch of spring onions, 100 ml (1/2 cup) fish broth, 100 ml of cognac, 2 squares of chocolate, dragoncelli, olive oil, salt, pepper.
CASE Brown the chopped shallots in a little oil; Add the fish, FRY on both sides for a few minutes then fiammeggiate with cognac.
