Monkfish with anchovy Sauce
Instructions
Lightly grease a baking sheet and settle the trance.
Sprinkle them with the shallots, lemon peel and a sprig of parsley, finely chopped.
Add two tablespoons of olive oil, sprinkle white wine, salt and pepper.
Bake in preheated oven at 200 degrees for half an hour.
Meanwhile, prepare the sauce: Peel hard boil eggs.
In a bowl mash the anchovies and de-boned water, add the yolks and the juice of half a lemon to colander.
Mix well, add 5 tablespoons of olive oil slowly, stirring constantly.
The sauce should be thick enough.
Place in a serving dish the trance of monkfish and garnish each with a bit of anchovy sauce.
Serve with white potatoes cut into wedges and steamed.
Accompanying wines: Gavi DOC, Pomino Bianco DOC, Greco Di Tufo DOC.

- 4 trance of monkfish (angler fish)
- 4 anchovies
- 2 eggs
- 1/2 cup of white wine
- 1 shallot
- 1 lemon
- 1 sprig of parsley
- 7 tablespoons of olive oil
