Instructions

08010 CABBAGE SALAD, oranges and AVOCADOS 4 PERSONS INGREDIENTS 1 small cabbage, 2 3 oranges, avocado, juice of half a lemon, 1 egg yolk, 1 tablespoon of mustard, extra virgin olive oil, salt and pepper.

PROCEDURE cut in half the cabbage very finely and then affettatela.

Peel the oranges, alive with a serrated knife to separate the individual cloves, removing cuticles.

Collect the juice lost during operation in a bowl and keep aside.

Peel avocados, cut them in half, remove the pits and slice them up, moisten with lemon juice to not let them blacken.

Seasoned mayonnaise with mustard, a tablespoon of lemon juice and stretch it with orange juice kept aside.

You have a floor on each plate of cabbage, oranges and Avocados.

Pepper to taste and serve with the sauce.
