Instructions

12541 SOUFFLE ' with SHRIMP INGREDIENTS for 4 PEOPLE 30 g butter, flour for the flat, 500 g of potatoes, 4 eggs, 4 tablespoons of cream, 125 g of grey shrimps, 75 g of grated Parmesan cheese, 1 teaspoon of lemon juice, salt, pepper.

Preheat oven to 210° Grease and flour a souffl ' mould and rigiratelo to remove the excess flour.

Peel the potatoes and cook for 20 minutes in boiling salted water; drain and cut it into mashed potatoes.

Separate the egg yolks from the whites of the eggs; without ceasing to stir with a wooden spoon, stir the mashed 3 egg yolks, cream, peeled shrimp, grated cheese, salt and pepper.

Whip egg whites with a pinch of salt and lemon juice, egg whites and 4, with the help of a spatula, add the mashed.

Fill the mold up to 2/3 and bake in hot oven for 25-30 minutes: the souffl ' should be golden and puffy.

Serve immediately.
