Instructions

21334 FRAPPE? PISTACHIO INGREDIENTS for 4 PERSONS 250 g of fresh pistachios salted and peeled, 100 g of caster sugar, whole milk 50 cl, 20 cl of fresh cream, 10 g of corn starch, 6 egg yolks.

With the help of a blender, reduce in mash 150 g of pistachios and 30 g sugar; the rest of coarsely chopped pistachios.

Pour the milk and pistachio puree in a pot, bring to a boil, cover and let stand for 10 minutes.

Pass the mixture in a strainer over a saucepan, pressing well ingredients to grasp all the aroma.

Bring back to a boil scented milk.

Whip the fresh cream with 30 g of sugar, and keep it aside in the fridge.

With an electric mixer, beat, for 5 minutes, the egg yolks and the rest of the sugar; without ceasing to stir, add the cornstarch, and then, little by little, the perfumed hot milk.

Pour the preparation in a pan and finish cooking, very soft focus, for 2/3 minutes: must be more dense and creamy.

Spread the pistachio milkshake in individual glass goblets, and garnish with whipped cream and sprinkle with chopped pistachios.

Serve immediately.
