Video Recipe

Put the ingredients in the mixer, let work the machine a few minutes, take the dough and work it by hand until dough is elastic.

Let rise for 2 hours covered with a cloth, then reshuffle very gently giving it the desired shape, and put it on a baking sheet and leave it for the second rise another hour well covered.

With the oven already warm in 250° put the baking tray in the oven, and after 20 minutes reduce the temperature to 160° and finish cooking at this temperature. Cooking time (total) about 45-50 minutes. Let it cool down (without cut, will continue her cooking) for about an hour, keeping it on a grid so that steps also under air.

This type of cooking, makes the outside crispy and soft Crumb.
