Chickpea cream (2)
Instructions
Drain the chickpeas, place them in a saucepan and cover with water.
Simmer for 10 minutes on high heat and for other 2 hours over low heat.
Once cooked, drain and save 30 cl of water.
Switch the chickpeas and the rest of the ingredients, add water to obtain a creamy consistency.
Serve with olive oil and chopped parsley.
Ingredients and dosing for 4 persons
- 250 g of chickpeas soaked overnight
- 2 cl of tahin (sesame seeds)
- 3 cloves of garlic
- 3 lemons (juice)
- Salt
- Pepper
- To decorate:
- 1 tablespoon of olive oil extra-virgin mixed with chopped parsley
