Potato croquettes (2)
Instructions
Put in pot to cook potatoes 8 large with the skin.
When they are cooked, Peel and mash.
Add to: 1 egg yolk, salt, a pinch of grated nutmeg and 1/2 tablespoon of cornstarch (Cornflour).
Knead well this mass when it is hot, put a little flour on the table.
Place this mixture and form a cylinder of 2-3 cm thick; cut into sticks of about 5 cm each.
Move the sticks in beaten egg and then in bread crumbs.
Immerse them in the oil (like for French fries), until they are golden and well warm.

- 8 large potatoes
