Cod baked in foil
Instructions
For the Cod: scale and gut the cod, then wash under cold running water (if you don't have the patience and skill, ask your fishmonger you trust to prepare it).
Wash beans, drain and spuntarli.
Shell the peas.
Bring to a boil a pot of lightly salted water.
When the water boils, sbollentarvi beans and peas to mimiti 5, then drain.
Wash, drain and chop the Basil.
Pour the vegetables into a bowl, add chopped basil, lemon juice, red pepper and olive oil: mix well and add salt to taste.
Place the cod in the center of a sheet of baking paper.
Put the seasoned vegetables in the abdominal cavity of the fish.
Repeat step covering the Cod.
Heat the oven to 180 degrees.
Brush sides of parchment paper with a little egg white, cover with another sheet of parchment paper to close the bag (the egg white serves as a glue).
Put the bag got on a baking plate.
Bake the plate and cook for 35 minutes.
To serve: remove from oven the cod, put it on a plate to take it and serve at the table still locked in in foil.
Serve the fish with a side of boiled beans, seasoned with olive oil, lemon, salt and a handful of chopped parsley.

- 1 cod of 1500 g
- 200 g of green beans
- 150 g of fresh shelled peas
- 4 leaves of basil
- 2 tablespoons of olive oil extra virgin
- 1 tablespoon of pink pepper
- 1 tablespoon of lemon juice
- Salt
- 1 handful of chopped parsley
