Herring flan
Instructions
Break the bread and let it soften in milk, then squeeze and tritatelo.
Rinse herring, diliscatele and chop finely; then when done carefully with the butter did melt in a double boiler, egg yolks, bread and a generous pinch of pepper to obtain a homogeneous mixture which, ultimately, will join the egg whites (very gently and reshot from the bottom up to avoid that all deflate).
Then distributed the mixture of herring in individual buttered moulds and bake in moderately hot oven for 30 minutes.
Drafted and serve at once, accompanied with toasted brown bread croutons.

- 3 kippers
- 400 g of stale bread
- 3 eggs
- 1 lemon
- 2 glasses of milk
- 30 g of butter
- Salt
- Some crostini of black bread
