Crumble the bread and put it to soak.
Pass it through a sieve.
Pour it together with the eggs, salt, lemon zest, and 40 g of sugar.
Mix well.
Melt the butter in a pan.
Pour the mixture in the bowl.
Cook for 5 minutes.
Turn the omelet on both sides.
Sprinkle with remaining sugar.
