Instructions
Beat the egg yolks with sugar: combine the crushed amaretti biscuits, cocoa, lemon and stir well.
Wet and wring the sheets of isinglass, add them to the milk and stir the mixture.
Finally beat the egg whites until foamy and miscelateli to other ingredients trying not to dismount.
Meanwhile with little caramelized sugar inside of a mould for puddings rather often (preferably copper).
Pour the mixture into the mould filtering with a colander: bake in a water bath for an hour and a quarter, making sure that the mixture does not come to boil and you won't enter water.
Let cool in pan.
According to tradition, this ancient dessert should rest in a cool place for at least a day before coming into a pudding dish.

- 100 cl of boiled milk
- 100 g of amaretti biscuits
- 8 egg yolks
- 4 egg whites
- 250 g of sugar
- Grated lemon rind
- 100 G = = cocoa powder
- 4 sheets of isinglass
