Mousse with berries
Instructions
Defrost the berries for about 2 hours and beat them until you obtain a smooth cream.
Mix the egg yolks with sugar and add them to the past.
Cook the mixture in a water bath for 10 minutes stirring slowly until it begins to solidify.
Let cool and refrigerate for 1 hour to make it even more solid.
Beat well and add cream to the mixture and stir slowly from top to bottom until everything is smooth.
Garnish with the grated lemon rind and serve.

- 150 g of frozen berries
- 2 egg yolks
- 2 tablespoons of sugar
- 25 cl of cream
- == 1 lemon (zest)
