You know those cheeses here in Piedmont are called ' yellow hints ', round measuring a tea saucer or so, high around a finger and made a tender flavorful crust that is eaten whole and a fat yellow and soft dough similar to Brie as well as taste? Well, take an adequate amount; cut them horizontally, then stuffed with walnuts just coarsely crumbled walnuts and raisins.
Close a sandwich and put it in the oven too hot until they begin to melt out the springs.
The skin is still all together.
Eat well, with a sprinkling of good white pepper or chili, or even nothing (maybe a little truffle, for those who can afford it).
