Instructions

Pitted cherries, put them in a small saucepan, add the sugar, water and cook over moderate heat blankets.

Drain and pass through a knitting mill.

Then reduce to low heat cooking sauce, leave it to cool and add to cherries.

Dilute with a glass of kirsch, stir and serve this sauce with vanilla ice cream or panna cotta.

Or use it as a filling for a cake.
