Flans of herring
Instructions
Soak 400 g of stale bread in a cup of milk, squeeze it and sift it.
Add 2 tablespoons of melted butter, 2 water herring, de-boned and finely chopped, 3 egg yolks, 1 pinch of pepper, and finally 3 whipped egg whites until stiff.
Mix well the mixture and spread into 4 buttered baking molds.
Bake for 25 minutes in the oven already warm to 120 degrees.
Serve hot with lemon wedges.
