Chocolate Mousse (Spuma Alla Cioccolata)
Instructions
In A double boiler Whisk egg yolks with sugar.
Boil the milk and add the eggs and sugar.
Cook on low heat until the cream thickens.
Melt the chocolate in a little milk and add to the cream.
Blend well and pass.
Cool quickly by placing the bowl over crushed ice.
First day serve 50 cl add whipped cream.

- 150 g of sugar
- 50 cl of water
- 400 g of chocolate
- 50 cl of whipping cream
