Cold foam of wine
Instructions
Put in a saucepan the yolks of egg yolks, sugar, marsala, the wine and cook in a Bain-Marie banging with a whisk until a thick cream.
Add the isinglass soaked.
Stir the custard until it cools.
Place it in cups from champagne, let you consolidate and decorate it with whipped cream.
Ingredients and dosing for 4 persons
- 6 egg yolks
- 200 g of sugar
- 25 cl of marsala wine
- 50 cl of young red wine
- 6 sheets of isinglass
