Instructions
Grease with melted lard or pancetta over low heat a casserole (crock if possible), spread a layer of the Esplanade, one of sliced cheese, herbs, cheese, garlic, pepper, nutmeg.
Continue layers until exhaustion ingredients, ending with cheese.
Poke the preparation with a skewer, coming up at the bottom and slightly enlarging the holes.
Squirt with the hot broth and put in oven at 180 degrees already warm for about 30 minutes.
You must obtain a dry soup, almost one flan, serve hot or warm.
If you like you can flavor with grated lemon rind (the broth should be used for sheep or lamb, instead you can use a soup of mixed meats-pork, beef, chicken-or only one type, but flavorful) in some cases is enriched with one stufatino (u ghisatu).
