Instructions
Whip egg whites until foamy and keep them aside.
Beat the egg yolks with 5 tablespoons sugar; After you add the mascarpone cheese and continue to stir.
Put a layer of cream prepared then soak the pavesini in coffee and another layer of cream, redo another pavesini layer in the opposite direction and cover with another cream.
Sprinkle in the end with cocoa powder.
